Cheesy Potato Crisps

For New Year's Eve, I always love to serve appetizers.  I think of this recipe for Cheesy Potato Crisps as a meatless alternative to sausage balls.  They taste very similar to sausage balls and are a great appetizer for all ages. And they're very easy on the wallet too!  Serve these alone or alongside your favorite dips like ranch and honey mustard.

Recipe for Cheesy Potato Crisps
Ingredients:
 1/2 cup finely crushed potato chips
1/2 cup finely shredded cheddar cheese
 4 tablespoons all-purpose flour
2 tablespoon butter, softened
1/2 teaspoon honey mustard
Pinch cayenne pepper

Directions: In a small bowl, combine all ingredients. Shape into 3/4-in. balls. Place on an ungreased baking sheet and flatten slightly. Bake at 350° for 8-10 minutes or until golden brown. Remove to a wire rack. .

    I'm pinning these too! We always have tons of potatoes because I buy them at Costco. I've also been dabbling with making more freezer meals, and I wonder if this would work great because potatoes tend to dry out after they have been in the freezer... which would make these even crispier! I'll let you know if I try it.
