Today I’ve got a fantastic side dish that I made this week using Country Crock:  Au Gratin Potatoes.   sidedish  This was my first time to make Au Gratin Potatoes from scratch, and I was very pleased with how they turned out.  I found the recipe online but made some changes to it.  This was very easy to make and not very time consuming, so if you’ve always wanted to make homemade Au Gratin Potatoes or if you’re just looking for something new to try this Thanksgiving, check out my recipe!   sidedish    Recipe for Au Gratin Potatoes:

Ingredients:

4 cups diced potatoes (about 1/2-inch dice)

5 tablespoons Country Crock

1/3 cup flour

1 3/4 cup milk

1 teaspoon black pepper

1 teaspoon salt

2 cups  shredded sharp Cheddar cheese

Directions: Put the potatoes in a saucepan and cover with water. Bring to a boil over medium-high heat. Lower heat to medium, cover, and continue boiling for about 20 to 25 minutes, or until potatoes are fork-tender. Drain.

Use 1 tablespoon of Country Crock and spread over bottom and sides of an 8×8 baking dish. Heat oven to 400 degrees.

Meanwhile, in a medium saucepan, melt 4 tablespoons of the Country Crock over medium heat. Add flour and stir until blended and bubbly. Add the milk and continue cooking, stirring, until thickened. Stir in salt and pepper. Add 1 1/2 cups of cheese to mixture and stir until cheese is melted in.

Add in the drained potatoes.  Stir until potatoes are coated with cheese sauce. Transfer the potato mixture to the prepared baking dish.  Sprinkle with remaining 1/2 cup of cheese (use more if desired). Bake for 15-20 minutes.
