We are definitely home bodies.  My husband would rather stay home on the weekends that go out any day, and I generally feel the same way.  A trip to Walmart is like an adventure for me!  But I’m even happier just staying home when I’ve got great food (and especially desserts) to eat!

Although I enjoy a trip to the Ice Cream Parlor or Cupcake Shop just as much as the next girl (okay….honestly I probably enjoy it MORE than most children..) I have to say there is nothing like homemade ice cream to make your summer days fun, cool, and sweet!

To a lot of people, homemade ice cream means sitting around, turning a crank, listening to a much of noise, and generally a lot of trouble, not to mention the cost of the ice cream freezer (if you don’t already have one) which can be $50 and even $100.  BUT today I’m showing you how to enjoy a little homemade ice cream treat without all that hassle!

No-Churn Chocolate Chip Cookie Dough Ice Cream

 I searched the web until I found a super easy No-Churn Vanilla Ice Cream, and then I doctored it up with a little chocolate and cookie dough, to create a decadent No-Churn Chocolate Chip Cookie Dough Ice Cream!

No-Churn Chocolate Chip Cookie Dough Ice Cream


For the Ice Cream:

1 cup heavy whipping cream

1/4 cup half & half

1-2 cups powdered sugar

1 teaspoon vanilla

For the cookie dough:

1/2 cup unsalted butter, at room temperature

1/2 cup light brown sugar

1/4 cup granulated sugar

2 tablespoons heavy cream

1/2 teaspoon vanilla extract

1/4 teaspoon salt

3/4 cup all-purpose flour

1/2 cup miniature semisweet chocolate chips

Optional Chocolate (to mix in):

1/2 chocolate chips or chocolate chunks

OR use magic shell chocolate


Pour cream and half & half into a large bowl and beat with a hand mixer until semi-stiff peaks form. Then add vanilla and powdered sugar 1/2 cup at a time, folding in lightly. Taste as you go to make sure it doesn't get too sweet. Then pour into a freezer-safe container, cover with plastic wrap and a lid. Freeze overnight or at least 6 to 8 hours. (If you are unsure if you beat and mixed it properly, you should check the ice cream periodically and shake it to ensure a proper consistency.)

For the cookie dough balls:

Beat together butter and sugars with an electric mixer until light and fluffy. Add the cream, vanilla and salt and continue beating until well combined.

Turn electric mixer to low and add in the flour until fully incorporated. Fold in the chocolate chips and refrigerate dough (can be stored up to 2 days).

After ice cream is frozen, take your cookie dough and scoop out in to tiny balls. (You could use a cookie dough scoop and then cut the balls, or use a teaspoon or melon baller to get a good size chunk.) Fold dough balls in to the ice cream using a spatula or large spoon.

If you'd like additional chocolate in the ice cream, fold in mini chocolate chips or chunk chunks. You also take a cookie sheet, lined with parchment paper and pour out a layer of magic shell. Then break the hardened shell out in to tiny pieces and fold in to ice cream.

Store left over ice cream in freezer.
