My family is very excited for football season to be starting!  My husband has already explained to me that the television station will be glued to the SEC Network, so that if I don’t want to watch sports, I can plan accordingly and go to the next room. Haha!  But actually I really enjoy football and I especially love watching our team the Crimson Tide!  And I also look forward each week to game day food!

We usually order out or make something early that will last the day, and game day food is generally “man food.”  We like appetizers, especially chicken fingers and wings! But we also sometimes go for things like meatballs, sausage balls, cocktail weenies, cheesesticks, cheese fries, or chips and dip.  And other times we like simple meals like sub sandwiches, grilled burgers, chili dogs, pizza, and barbecue sandwiches. Yes, we do love to eat!

As much as I love all the salty and spicy goodness of game day, I wouldn’t be me if I didn’t crave something sweet!  So today I am sharing a simple dessert that you can prepare to make your game day even sweeter!  I took my recipe for strawberry pretzel salad and turned it in to a kid-friendly game day treat: Strawberry Pretzel Parfaits.  And I added a little extra team spirit to the treat using Jell-O University Molds!

Jello University at Walmart

 

I shopped for the Jell-O University kits on Walmart.com.  I’ve also seen them at my local Walmart store, so you can have a look there as well.  They are currently $5.98 on the website (+ shipping), but right now on Walmart.com they also have a 75 cent coupon available for you.

The kit comes complete with 4 Jello-O packages, and two molds.  Each mold makes 12 jigglers, enough to use with one box if Jell-O.  The Jell-O molds feature your teams logo and mascot, and your Jell-O will come in flavors to match your teams colors.  The molds, of course, are also reusable, so you can use them again and again!

Roll Tide Parfait

 

I decided the Jell-O jigglers would be the perfect parfait garnish!  And since my kit came with strawberry flavored Jell-O, it went perfectly with these parfaits.  But since the kits come in flavors that match your team’s colors, you can make your own team spirit parfaits in whatever color or flavor you like! (I imagine an Orange Pretzel Parfait would be quite tasty!)

Roll Tide! Strawberry Pretzel Parfaits

Ingredients:

2 cups crushed pretzels

3/4 cup butter, melted

3 tablespoons white sugar

1 (8 ounce) package cream cheese, softened

1 cup white sugar

1 (8 ounce) container frozen whipped topping, thawed

3 (3 ounce) packages strawberry flavored Jell-O®

3 cups boiling water

Directions:

Heat 4 cups of water to boiling. Add 4 packages of Jell-O and stir until dissolved. Before pouring in to molds, spray the molds with cooking spray for easy removal.

A third of the Jell-O will be placed in a Jell-O University Mold. The rest will be poured up in to a small bowl (can be square or round.) Let Jell-O set in the refrigerator for at least 3 hours.

The next steps can be done directly after making your Jell-O, or you may wait until your Jell-O has had time to set.

Place pretzel is a zipper bag and crush using a rolling pin other other utensil. In a small bowl melt your butter. Add 3 tablespoons of sugar and mix well. Stir in pretzels. Pour mixture out in to a shallow backing dish. Bake at 400 degrees for 8 to 10 minutes. Set aside to cool. If you are making your parfaits immediately after making pretzel mixture, you may want to let it cool in your refrigerator or freezer.

For white topping, set your cream cheese out to soft, or place in the microwave for just a few seconds. Add a cup of sugar and mix well. Fold in whipped topping. Set aside.

Now you are ready to assemble parfaits. The ingredients are enough to make anywhere from 4 to 12 parfaits, depending on the sizes you are making.

For your parfaits you will start out with a base layer of the pretzel mixture. Next add a layer of the white mixture. Then using a case knife, cut cubes in to your Jell-O mixture and use a spatula or a small spoon or fork to scoop out the Jell-O and add to your parfait. (You could also use an ice cube tray to make cubes OR even use the University kits to make more team spirit shapes!) Next add another smaller layer of the white mixture. Then add a few pretzel crumbles on top and garnish with a Jell-O University Jiggler!
