7-Layer Mexican Casserole with Success Rice

Rice is one of my favorite kitchen staples!  I love serving it as a side, and I especially love to use it in casseroles!  But with some rice products you have to be careful, or your rice won’t be good and done.  But Success® Boil-in-Bag Rice makes it easy to cook up perfect rice!

I make a cheesy chicken & rice casserole, which is probably my favorite rice recipe.  And I also red beans & rice and jambalaya.  But today I’m sharing a Mexican recipe that you can make with Success® Rice.

I really love Mexican recipes, because they are made with ingredients I always have on hand, which means no special shopping trips just to make one thing!  And also, I love that you can just change one ingredient or two and have a completely different recipe.  This makes it easy to change things up and keep your dinners interesting.  The recipe that I’m sharing today is a great example of this.  The day before I made this 7 Layer Mexican Casserole, I actually made a double batch (2 pounds) of taco meat.  We used one pound of the meat for tacos, and then I used the remaining pound to make this casserole.

This casserole not only gives you something creative to do with taco meat, but it is quick and easy to make.  And it is versatile:  You can spoon it out and serve as you would other casseroles.  You can spoon it out over a bead of tortilla chips.  Or you can place it inside a hard or soft tortilla shell.

7 Layer Mexican Casserole

Ingredients:

1 bag Success® Brown Rice

1 lb hamburger meat

4 2/3 cup water

1 pack taco seasoning

1 can refried beans

3/4 cup sour cream

3/4 cup taco sauce

1 cup shredded cheddar cheese

1/2 cup jalepeno or banana peppers

Directions:

Cook hamburger meat and pour off fat. Return meat to skillet. Add taco seasoning and 2/3 cup water. Stir and heat through. Set aside.

Place Success Boil in a Bag Rice in 4 cups of water and cook as directed in microwave or on stove top.

Place taco meat in an 8x8 inch baking dish. Spoon refried beans over the taco meat. Next add the rice. Then spoon in the layer of sour cream. Then drizzle with taco sauce. Cover with cheese. Then top with peppers.

Bake at 350 for about 20 minutes or until cheese is bubbly and the casserole is heated through.

To serve, spoon casserole over tortilla chips or place inside a soft tortilla. Or eat the casserole alone.
