How many of you enjoy a bowl of Quaker Cereal for breakfast?  Me too!  And I also love using cereals in recipes!  Typically I enjoy using cereal for party mixes and dessert recipe.  But it can also be used as a substitute for bread crumbs in a number of recipes, which can help you to make the most of your pantry items and save you a trip to the store.  Today I’m sharing a great example of that using Quaker Life Cereal.

Mini Meat Loaf Cups

This recipe is a very easy take on the an old time classic comfort food, the meatloaf.  Apart from the Quaker Cereal, it includes easy, quick-fix ingredients.  And to make things more fun, interesting, and kid friendly, I turned the recipe in to mini meatloaf cups….or meatloaf cupcakes, if you will.

The meatloaf cups themselves are delicious and are great for easy serving to your family or guests.  And if you’re really wanting to make this extra special, just top with mashed potatoes for some super-delicious meatloaf cupcakes that can’t be beat! (You can also add bacon, cheese, and chives or a gravy to your mashed potatoes, for even more flavor!)

Mini Meatloaf Cups

Ingredients:

1/2 cup dry Quaker Life Cereal, crushed

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1 large egg

1 can sloppy joe sauce (15 oz)

1 to 1-1/2 pounds ground round beef

Directions:

Place Life Cereal in a zipped bag and crush. Use a measuring cup to scoop out the cereal crumbs to ensure you have half a cup. (You'll need more than half a cup of the uncrushed cereal to come up with a 1/2 cup of the crushed cereal.)

Place cereal crumbs in a bowl. Add salt and pepper. Stir. Add egg and about 3/4 of the sloppy sauce. Mix well. Add meat, and mix all ingredients together. You may want to use your hands for this.

Spray a muffin tin with cooking spray. Then spoon your meatloaf mixture in to each cup.

Bake at 350 for 35 to 45 minutes, or until meatloaf cups are cooked through.

Remove from oven. Wait a few minutes to ensure mini meatloafs are set; then carefully remove meat loaf cups from the tin to serve.

Notes

For more fun and falir, top with mashed potatoes. You can spoon these on or get a little fancy and use a piping bag. Also, feel free to use instant potatoes or go homemade.

Top your mashed potatoes with gravy, or bacon, cheese and chives for more flavor and decoration!
