Lemon Muddy Buddies Mix

Brachs Jelly Beans

Still eating leftover jelly beans from Easter?  Or are you more like me and you like to buy jelly beans year round?  Either way, you’ll love today’s fun recipe. Over the weekend I made some delicious Lemon Muddy Buddies Mix.  I love muddy buddies, and I’ve been wanting to try the lemon flavor a while…believe me, it didn’t disappoint!  When I make muddies, I always like to have at least one “add in.”  The add-in not only mixes things up in terms of flavor but it also adds a lot to the overall color and presentation of the mixture.  To liven up these lemon muddies, I added some Brach’s Jelly Beans.

The jelly beans went perfectly with this lemon, and I’d imagine it would be great with other fruit flavored and even plain vanilla muddies.  So break out your left over Easter jelly beans or go out and buy a new bag, and give it a try!

Lemon Muddy Buddie Mix

Lemon Muddy Buddie Mix

9 cups Rice Chex cereal (or similar cereal like Crispix or Life)

1 1/4 cups white vanilla baking chips

1/4 cup butter or margarine

2 tablespoons fresh lemon juice

2 cups powdered sugar

1 bag Brach's Jelly Beans

Measure out your cereal in to a large bowl and set aside. In 1-quart microwavable bowl, microwave chips, butter, and lemon juice in 15-30 second increments, stirring in between until chips are melted and mixture is smooth.

Slowly mix in cereal a little bit at time and stir until well combined.

Pour powdered sugar into a large zipper bag. Add cereal mixture (as much as will fit in the bag). Seal the zipper bag and shake, until cereal pieces are well coated. Remove cereal from bag and place on a sheet of wax paper. Repeat the process until all the cereal has been coated with powdered sugar.

Sprinkle the muddy mix with Brach's Jelly Beans, and then place the entire mixture into a plastic container for storage. Enjoy!
