A few weeks ago I made Chocolate Chip Cookie Dough Cupcakes for Noah’s birthday. The first time I made them was last year (also for his birthday). At the time, I wasn’t sure if he’d like them or not. (I don’t know what I was thinking….it’s cookie dough flavored frosting! How could he not like them?) But just in case, I decided to only use the cookie dough frosting on half of the cupcakes. For the other half, I used a milk chocolate frosting.
The good news is that this left me with half a bowl of delicious frosting to play with! One thing I decided to do with the leftover was add them to a stack of waffles!
This turned out to be such a yummy treat! It’s a guilty pleasure for sure, but seeing as how we normally put a lot of butter and syrup made of sugar all over our waffles, I don’t feel so bad about using a frosting made of butter and sugar.
I’d definitely recommend this to someone looking for a sweet option for breakfast or brunch! And it’s great for a dessert too!
Ingredients:
Chocolate Chip Waffles (I used Eggos)
Frosting Ingredients:
3 sticks unsalted butter, at room temperature
¾ cup light brown sugar, packed
3½ cups confectioners’ sugar
1 cup all-purpose flour
¾ tsp. salt
3 tbsp. milk
2½ tsp. vanilla extract
chocolate chips (optional)
Directions:
Beat butter and brown sugar with the paddle attachment on high speed until creamy and fluffy.
Mix in the confectioners’ sugar until smooth.
Beat in the flour and salt.
Mix in the milk and vanilla extract until smooth and combined.
Make waffles. Spread frosting on top of each waffle. Then top with chocolate chips (optional). Enjoy!
