Pina Colada Dip and Summer Snacking with Outshine Fruit Bars

The weather is perfect where I live right now.  I’m so excited to break out my summer clothes and enjoy summer activities, but I’m even more excited to enjoy a little summer snacking.  If you know me, you know that I love nothing more than indulging in sweet treats, especially frozen treats.

Outshine® Fruit Bars are a frozen treat for the whole family, and Moms can feel good about serving them to kids and enjoying them for themselves.  Today I’m going to tell you a little bit about these yummy frozen treats, and I’ve got a recipe and a sweepstakes for you. Let’s get to it!

Outshine Fruit Bars

Outshine Fruit Bars are a great way to snack brighter!  All the products are made with real fruits, veggies, or juice.  They are fat free and gluten-free.  They have no GMO, no high-fructose corn syrup, and no artificial colors or flavorings.

And last, but certainly not least, they come in a variety of amazing flavors and are totally delicious!  I recently purchased the Strawberry Fruit Bars and the Pineapple Fruit Bars.  Both of these were yummy, especially the pineapple.  And there are so many other great flavors to choose.  I’m planning on buying the Mango variety for Noah, and I’ve heard the Coconut Waters™ flavors are delicious!

Outshine Fruit Bars at Walmart

You can find Outshine Fruit Bars in the novelty ice cream aisle at Walmart.

Walmart is also doing demos of the product in select locations starting May 21 and going through July 14.  If you love free samples, you should check the list of demo locations to find out if your store is on the list.

Pina Colada Fruit Dip Recipe

Summer is also a fun time to whip up some cool treats of our own. When I tried the pineapple Outshine® Fruit Bar, I was inspired to create my own complementary dessert.  When I think of pineapple, I immediately think of pina colada, so I made this Pina Colada Fruit Dip.  It is an easy recipe that you can make in minutes.  It’s great for a little afternoon or evening snack.  It can be enjoyed anywhere, from your desk to your poolside lounge chair.  And of course, it is an excellent recipe to serve at parties!

Pina Colada Dip

Pina Colada Dip

Ingredients:

1 (8 oz.) package cream cheese, softened

1 (7 oz.) jar marshmallow creme

1 (8 oz.) can crushed pineapple, drained

3/4 cup sweetened flaked coconut

toasted coconut for garnish (optional)

cherries for garnish (optional)

Directions:

Using a mixer, beat cream cheese and marshmallow cream together in a medium sized bowl until smooth. Drain your crushed pineapple, and fold in to your cream cheese & marshmallow mixture. Then ad sweetened flaked coconut and mix well.

Optional: Garnish with toasted coconut and cherries. (To toast the coconut, preheat your oven to 350, sprinkle a tiny amount of coconut on to a nonstick baking sheet, and bake for a few minutes. Be careful to watch the coconut as it bakes and stir it as needed it to make sure it doesn't burn.)

Serve with vanilla wafers, graham crackers, or your favorite fruit.
