The holiday season is almost here! (Or is it here already?)  And with that, comes holiday baking and snacking!  When you’re an on-the-go mom, you don’t always have time to spend a whole day in the kitchen baking up something for the family Thanksgiving or the church potluck.  Luckily NESTLÉ® is here to save a day with whole host of baking staples and creative products that make holiday baking easy and fun!  Today’s featured recipe is actually two recipes in one.  I’ll be sharing a recipe for Pumpkin Muffins, and then I’ll show you how can transform those muffins in to Tres Leches Cupcakes.

With Thanksgiving just around the corner, I’ve been making plans for what I’ll be cooking, and I’ve already started stocking up on key ingredients.  NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels, NESTLÉ® CARNATION® Evaporated Milk, Libby’s®, and Libby’s® Pure Pumpkin are three staples I always like to have in my pantry for a little made-from-scratch baking.

Are you too busy to shop?  Then you should find out if your local Walmart has order pickup.  At select Walmart locations, you can order your groceries online; then the store puts the order together for you.  All you have to do is pick it up!  And you’ll even get $10 when you refer-a-friend, and they place their first order.

Pumpkin Muffins are a great treat for fall and the holiday season.  For an on-the-go mom, this recipe is great, because you can make a batch and have them for an entire week of breakfasts and snacking.  And they are also great to take along for holiday brunches.

These muffins are also great to put up for later.  Just place them in the freezer, inside a freezer bag.  Then whenever you want muffins for breakfast, just take out as many muffins as you need, and reheat them in the oven for a few minutes.  They will come out piping hot and fresh!

.The muffins are also made with Libby’s® Pure Pumpkin, a wholesome ingredient that’s rich in anti-oxidants.

These muffins are already delicious all by themselves, but through a simple process shown in the photo above,  you can transform them into something even more extradordinary: Tres Leches Pumpkin Cupcakes!

These cupcakes are amazing!  The moist sponge-like muffins are filled with an ooey-gooey 3-milk filling,  Then they are covered in a whipped cream topping, which adds a light sweetness to the boldly flavored pumpkin spice cake.

Tres Leches Pumpkin Cupcakes

Ingredients:

For Muffins/Cupcakes:

3 cups all-purpose flour

1 tablespoon plus 2 teaspoons pumpkin pie spice

2 teaspoons baking soda

1 1/2 teaspoons salt

3 cups granulated sugar

1 can (15 ounces) LIBBY'S® 100% Pure Pumpkin

4 large eggs

1/2 cup vegetable oil

1/2 cup water or orange juice

For Filling:

1 can Nestle Carnation Evaporated Milk

1 can sweetened condensed milk

1/4 cup heavy whipping cream

Icing:

1 pint whipping cream

3 tablespoons sugar

Optional Toppings:

Pumpkin Spice

Chopped Walnuts or Pecans

Shredded Coconut

Directions:

Preheat oven to 350° F. Line 30 muffin cups with liners.

Combine flour, pumpkin pie spice, baking soda and salt in large bowl. Combine sugar, pumpkin, eggs, oil and juice in large mixer bowl; beat until just blended. Add flour mixture to pumpkin mixture; stir just until moistened. Spoon batter into prepared muffin cups, filling 3/4 full.

Bake for 25 to 30 minutes or until wooden pick inserted in centers comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.

Once cupcakes have cooled completely, use a kebab rod or a fork to poke holes in the cupcakes.

In a large measuring cup or bowl, mix together Nestle Carnation Evaporated Milk, sweetened condensed milk, and 1/4 cup of heavy whipping cream, until well combined. Then spoon this "tres leches" mixture over your cupcakes. You may need to wait a moment for the milk to sink in to the holes; then add a little more of the mixture. Allow cupcakes to soak up the milk for about 30 minutes.

Meanwhile place one pint of whipping cream and 3 tablespoons of sugar in a medium sized bowl and beat using a mixture for several minutes, until mixture is thick, creamy, and spreadable.

Spoon whipped cream mixture over cupcakes.

Then garnish with pumpkin spice seasoning, chopped nuts, or shredded coconut. (optional)

    Pumpkin anything is a great treat in my house. I like making pumpkin bread pudding using ingredients from walmart also.
