Guest Post: Lemon Drop Ice Cream Sandwiches from Judy at Season of Sweets

Today we have another great recipe guest post from one of our bloggy friends.  Judy from Season of Sweets is here to share a fruity take on an old classic ice cream treat. Check it out!
Hi, I’m Judy from Season of Sweets. I was so thrilled when Jerri asked me to guest post. I love stopping by Simply Sweet Home and am a big fan of Friday Favorites. I’m a newbie in the world of food blogging and lauched my site last Fall. Now that my kids are college-bound (Yikes! That happened so fast!), it’s my season to share these sweet treats with you! One of my fondest summer memories is eating Rainbow Sherbet. These Lemon Drop Ice Cream Sandwiches were a breeze to make using the Wilton Treat Pops. Adding crushed Lemon Drops gives that burst of summer in every bite!

Lemon Drop candy, crushed
Rainbow Sherbet
Wilton Treat Pops

To make mini ice cream sandwiches, start by filling Wilton Treat Pops with soften rainbow sherbet. Spoon in small amounts, layering with crushed Lemon Drop candy. Continue to drop in small amounts at a time, pressing with the back of a spoon to be sure to keep out air pockets. Freeze for at least 1 hour. Meanwhile, prepare sandwich cookies by removing the top cookie. Pour out some crushed Lemon Drops on a small plate or bowl. Remove tubes of ice cream from the freezer, one at a time. Working quickly, cut 1/2” slices of ice cream and place on cookie. Cover with cookie top and roll sides in crushed Lemon Drops. Quickly put in freezer until ready to serve. Repeat with remaining ice cream and cookies.
