Guest Post: Chocolate Pie with White Chocolate Peppermint Mousse from Elizabeth at Balm to my Soul

My grandmother made this chocolate pie. It has come down as a family tradition to serve at Thanksgiving, Christmas and special occasions. It is not only delicious, but a wonderful reminder of a Grandmother who loved us all very much. She often showed her love through action.

There are gifts of the holidays that we buy at the store: the newest electronic device, the bigger tv, the newer clothes, the Blue-Ray we’ve been waiting for, and then there are gifts that don’t break, wear out, or fade over the years: those are the gifts we carry with us. Those are the gifts that make Christmas Christmas.

So, it isn’t really the pie that is the gift from my Grandmother, but it is the gift of memories. I have some beautiful memories of Christmas. I hope you do as well.

So, in an effort to share the love, here is a piece of my Grandmother’s pie:

Chocolate Pie with White Chocolate Peppermint Mousse

Chocolate Pie with Peppermint Mousse

Chocolate Layer:

1/2 cup butter, softened

3/4 cup sugar

1 square melted unsweetened chocolate (I used Baker’s)

1 tsp. vanilla

2 eggs (or 1/2 cup egg beaters)

White Chocolate Peppermint Mousse Layer:

4 oz. cream cheese, softened

1/2 cup white chocolate, melted

1/4 cup powdered sugar

2 cups whipping cream, whipped

1 Tbsp. peppermint, crushed

1 baked pie crust

crushed peppermint and chocolate for garnish

sweetened whipping cream

Prepare pie crust.

Prepare chocolate layer:

Mix butter and sugar. Melt square of chocolate in microwave at 50% power for 30 seconds and stir. Continue until chocolate has melted. Add to butter mixture.  Add one egg at a time and beat on high speed for about 5 minutes. You will see the chocolate become light and creamy.

Spread into cooked pie crust. Put in refrigerator to chill for at least 30 minutes.

Prepare white chocolate mousse layer:

Whip cream to soft peaks. Add powdered sugar. Melt white chocolate at 50% power in microwave for 30 seconds. Stir and repeat until chocolate is melted. Add chocolate to softened cream cheese and whip. Fold whipping cream into white chocolate/cream cheese mixture.  Add crushed peppermint.

Spread white chocolate peppermint mousse on top of chocolate layer.  Put in refrigerator for several hours to set.

Chocolate Pie with White Chocolate Mousse

Top with crushed peppermint, chocolate shavings, and sweetened whipping cream.

Serve!

Oh, this is so good!! My grandmother would only make it with the chocolate layer, so that is my family’s favorite. But, I love the addition of the white chocolate mousse with peppermint. It truly makes this pie extra special!!
