I personally love “salad sandwiches” like chicken salad and tuna salad.  Recently I tried a different salad and sandwich combo:  a Potato Salad Sandwich.

This is a great idea if you are looking for a family meal that is easy and affordable and can be made with ingredients you already have on hand, and one bowl of potato salad can make a LOT of sandwiches.

And if you’re in to saving money and time, this is a creative way that you can use your leftover potato salad from a previous meal!

Below you’ll find my potato salad recipe.  I actually never measure the ingredients when I make potato salad; it’s one of the only recipes I make where I don’t measure.  So if you follow this recipe, you will definitely want to make some adjustments so that it fits your needs and tastes!
