The countdown to back to school is officially on.  Next week we are going to pay our son’s class fees so that he can get his school schedule, and then we’ll be buying school supplies and shopping for new clothes.  And even though we’ve still got a couple of weeks to go, I’m already thinking of menu ideas for all those back to school weeknights.  If you read my blog regularly or just look at the title, you will know that I embrace simple solutions, and that includes simple meal ideas.  Simple meals made with simple ingredients not only save me a lot of time and hassle, but they make my family happy.  And the great thing about some of our favorite meals, is that I can easily change them up to create all new favorites!

One of my son’s favorite meals is tacos.  I think he would eat tacos every single day if we would let him!  While I don’t want to cook tacos every night, I do enjoy coming up with similar alternatives to tacos such as quesadillas and Mexican Pizzas!  Today I’m going to show you how we make our Mexican Pizzas, and I’ve also got some coupon deals on Campbell’s products like Pace Chunky Salsa!

Pace Chunky Salsa

Pace Chunky Salsa is a key ingredient in our Mexican Pizzas.  Pace Chunky Salsa features chunks of vegetables and adds a delicious kick of flavor as a dip or a recipe ingredient.

Pace Chunky Salsa can be found in the Latino and Ethnic food aisle at your local Walmart.  And in addition to Walmart’s everyday low prices, they currently have printable coupon for $1 off any Pace product when you buy 2.

You can also download coupons for other Campbell’s products like V8+Energy, Prego Italian Sauce, and Campbell’s Chicken Noodle Soup.  This is a great opportunity to stock up on your family’s favorites.  I, for one, always love a good deal on Campbell’s Chicken Noodle Soup.  I practically lived on it when I was a kid, and I always keep it in my pantry!

Mexican Pizzas with Pace

These Mexican Pizzas are a pretty versatile meal.  Here I’ve made one using ground beef, but you can make these with any protein you like.  You can also construct all the pizzas for your family, or create a toppings bar and let everyone construct their own.  Either way, this makes for an easy and quick dinner, featuring all the food groups!

Mexican Pizzas


1 lb ground beef (should be enough to make about 8 pizzas)

1 package taco seasoning

2/3 cup water

1 can refried beans

1 jar Pace Chunky Salsa

2 cups shredded cheddar cheese

sour cream


small tortillas (16 to make 8 pizzas)


Brown ground beef and drain the fat. Return meat to pan and add taco seasoning and water and mix well. Heat to boiling and then heat on low for about 5 minutes or until heated through. Remove from heat and allow meat mixture to set for a couple of minutes.

While your meat cooks, heat a can of refried means on low for 5 to 7 minutes or until means are warm.

Microwave tortillas for about 1 minute or bake for about 5 minutes in a 350 degree oven.

To prepare each pizza, take a tortilla and cover with about 3 spoonfuls of refried beans. Place a second tortilla on top (like a sandwich). Then cover with a few spoonfuls of Pace Chunky Salsa. Next cover with a few spoonfuls of taco meat. Then cover the meat with shredded cheddar cheese. Then cover with lettuce or garnish with lettuce on the side. Finally, top with a dollop of sour cream.


If you'd like for your dish to be more pizza-like, construct your pizzas, and after the cheese has been added, place them in the oven for a couple of minutes to melt the cheese. Then add your lettuce and sour cream.
