Oreo Icebox Cake

Today I’m really excited to present this recipe featuring one of my favorite cookies: Oreos.  I got the idea for this Oreo Icebox Cake from this recipe for Chips Ahoy Icebox Cake by Spend with Pennies.  I made a few tweaks, including the use of pudding, and all in all, it made a pretty tasty (and super easy!) dessert.  Hope you like it!

1 box Oreos

1 box Oreo Pudding

3 1/2 cups milk

1 8 oz tub whipped topping


Stir together 2 cups of milk and pudding mix until pudding mix is dissolved and well combined. Chill in the refrigerator until it is set. The rest of the milk will be used for dipping your Oreos. Dip each cookie for a couple of seconds, just till the milk soaks in. (If you dip for too long the cookies will break apart and your cake will be soggy.) In an 8x8 inch square pan, place 4 rows of 4 Oreos each. Then add about half of your pudding mixture on top, followed by half the whipped topping. Next add 3 rows of 4 cookies each. (Just space them out a little bit, as there aren't enough cookies in the package for another layer of 16. Note: You should have two cookies left for the topping). Next add remaining pudding, followed by remaining whipped topping. Finally crush remaining Oreos (dry, not dipped) and place on top. Chill in your refrigerator or freezer.
