I’ve never been a “go out on New Year’s Eve” kind of person. I’d much rather than stay home. It’s way less crowded! But what I do love, is to have plenty of appetizers and snacks to help celebrate the occasion. The night wouldn’t be the same without them! This year for the sweet side, I made this Hot Cocoa Muddy Mix.
I’ve made a few different Muddy Mix recipes (or Puppy Chow if you will): Peppermint Muddies, Cheesecake Muddy Mix. and Strawberry Cheesecake Muddy Mix.
I love this stuff because I can make it in about 10 minutes or less! It is also a very festive snack that you can change up with just an ingredient or two (like my linked examples above).
I’ve enjoy each muddy mix I’ve tried, but I think this my new favorite! I looked at a few recipes for inspiration, and then I threw this together….I called myself making a “half batch” since a lot of recipes instruct you to use 6 or 7 cups of Chex Cereal (basically the entire box), but even my half batch made a pretty big bowl of stuff; I’d say it’s enough for 2 to 4 people. It’s definitely enough if it’s just you, your spouse, and a couple of kids. (Then again, this stuff DOES stay good for a few days, so even if you’re not having a party and just want a little extra for you and your family, by all means, feel free to double the recipe!)
Ingredients:
4 squares almond bark
3 cups Rice Chex Cereal
1 cup Cocoa Puffs
2 or 3 sleeves of hot cocoa mix
1/2 cup marshmallows
Directions:
Place 4 squares of almond bark in a microwave safe bowl. Microwave in 30 second increments, stirring each 30 seconds to prevent scorching. Add Chex Mix to melted almond bark. Once cereal is well coated, add sleeves of hot cocoa mix. Stir until well combined. Stir in Cocoa Puffs. Stir in marshmallows last. (This will ensure that the marshmallows will get slightly coated but will not melt in with the almond bark.)
Spread out on a cookie sheet lined with wax paper and allow to cool before serving.
Notes
Be sure to work fast when stirring in your ingredients, so that your almond bark doesn't get to dry. If you need to, place the bowl back in the microwave for a few seconds.
This ratio worked out great for me, but if you're mixture seems to dry and hard to stir, I'd suggest melting an extra cube of almond bark (in a separate container) and then adding it in. Meanwhile, if the mixture seems too wet, just add a little extra cereal.
